Quinces may look similar to pears, but did you know that they’re actually a part of the rose family? While it’s possible to eat quince raw, their real magic is realised when you cook them. Poached, honey-roasted or reduced into jam, quince is deliciously fragrant and a great autumn flavour. They’re also super-easy to store. Buy quinces that are firm and free of brown spots, and you can keep them on your kitchen counter for up to two weeks, where they’ll give off a gorgeously sweet scent - a natural air freshener!
